Ingredients:
- 1 cup dried soybeans
- 4 cups water, plus more for soaking
- Sweetener of your choice (optional)
- Vanilla extract (optional)
Equipment:
- Blender or food processor
- Nut milk bag or cheesecloth
- Large pot
Instructions:
- Rinse the soybeans and soak them in water overnight or for at least 6 hours.
- Drain the soybeans and rinse them again.
- Add the soybeans and 4 cups of water to a blender or food processor and blend until smooth.
- Strain the mixture through a nut milk bag or cheesecloth into a large pot.
- Heat the pot over medium heat, stirring constantly, until it comes to a boil.
- Reduce the heat and let it simmer for 20-25 minutes.
- Remove the pot from heat and let it cool for a few minutes.
- Strain the mixture again through a nut milk bag or cheesecloth, squeezing out as much liquid as possible.
- If desired, add sweetener and vanilla extract to taste.
