LEMON AND ORANGE LAYERED CAKE

INGREDIENTS:

Margarine: 1 cup

Castor sugar : 1 cup

Flour: 1-½ cup

Egg: 3

Baking powder: 1tsp

Orange zest: 1tsp

Orange juice : 2 tbsps

For Filling:

Whipped cream: 1-½ cups

Lemon zest: 1 tsp

Orange slice: 1-½ cups

Orange jam: ¼ cup

You can use any seasonal fruit

METHOD:

Mix margarine with sugar, beat it. Add eggs one by one. beat, add the flour and baking powder. Add orange zest, juice, whisk thoroughly, now pour the mixture in a greased fine tin, keep it in oven for 30 to 35 minutes at 180°C. Let it cool.

Cut cake in two halves. On one half spread jam and then put another sponge on it. Whip the cream in lemon zest. spread cream over top and sides of cake. Arrange orange slices and serve.
